April 2013

In light of all the events that happened this past week in Boston, I turned to my kitchen to process the sadness. This may be a high altitude baking blog, but I felt compelled to make something,  just to let Boston know we are thinking of them- whether it’s in Colorado or elsewhere. I was going to make Boston Cream Pie pancakes- fluffy vanilla pancakes layered with vanilla custard and topped with a drizzle of chocolate glaze. My thinking was they’d be great for brunch, dessert, or a late night snack. But as I was looking at recipes and getting some ideas, I realized I really just wanted to make original Boston Cream Pie. It’s the official dessert of Massachusetts, and a classic- fluffy, spongy cake, cool vanilla custard, and [...]

I could use a boost. Closing day was on Sunday, and since Saturday night we have gotten pounded with snow-almost (if not already) 3 feet. That’s a lot of snow. I’m tired of clearing it off of my car, I’m tired of strapping on boots, I’m tired of adding extra layers to go outside. I know that it’s springtime, and that on the next sunny day a lot of it will be gone. But I just wanted a moment to whine because I really would like to get on with my favorite time of year- Summer! Ok, I’m done. Despite all the white everywhere, I must add that it’s been beautiful in its own little twisted way. Many of the snow showers have been the heavy, wet snow that clings [...]

For any of you who are interested, in a few weeks I’ll be at the Couture Bridal Show in Denver, Colorado with my special occasion and wedding cakes business, Megan Joy Cakes. I’ll have several display cakes, gumpaste flowers, and plenty of cake samples for those who visit my booth. In addition to my cakes, there will be live music, a designer trunk show, cocktails, food, a luxury raffle (2-night stay in Telluride), and plenty of fun. This is a great event to check out with friends or family if you happen to have any upcoming nuptials or events this summer. And get this- you can receive complementary tickets by entering the promo code CAKES. www.couturebridalshow.com

When I was younger, I’d scrape the frosting off of sugar cookies and eat that part first. I’ve evolved a little bit since then, but I still do enjoy a good frosted cookie. It has to have the right balance though- the cookie either needs to be fluffy  (think Black and White Cookie), or crunchy, like these. I made a half recipe of these cookies last week and they were gone in about two days, if that. They make a perfect snack with a big chilled glass of milk, or alongside that morning cup of coffee. From reading all of my posts, I realize it probably sounds like I eat dessert for breakfast. I’m not going to comment on that. What I like about these cookies is that they get [...]

Hello friends! Today has been an odd mix of sunshine, rain, and snow. It’s the kind of weather that makes you want to stay indoors, so I am doing exactly that. The kitchen has gotten a good work out and I’m really pleased with the results. I have recently discovered a fantastic way to bake bread that produces a very crusty, artisan-style loaf. It requires no special equipment- just one simple item- a cast iron dutch oven. The dutch oven and lid are placed in a preheated 450 F oven for 30 minutes before you are ready to bake your loaf. In this way the dutch oven continues to build and retain heat- this is perfect for baking your bread. After it has preheated, it will be all hot and [...]
