I’ve returned! I know it’s been a rather long absence, but let me explain… In March of this year, we moved down valley to Eagle. Amid the hustle and lack of organization that comes from a short notice move, I lost my digital camera, and have yet to find it. Right after the move came a huge scramble to finish my commercial kitchen in time for wedding season. This was a very stressful time of finding the right space, modifying it to comply with local health department codes, ordering equipment, coordinating deliveries, and inspections. High Altitude Bakes is now one year old. Last year, on February 17th, we published our first post and I am so pleased with the progress the site has made. As a chef I respect the ingredients we use to create food with, and along with that I also deeply care about where they come from. You can never overlook that when it is your job to cook and bake with food everyday. I can tell you it is much more satisfying to buy a flat of peaches from the farmer who grew them himself, than it is to select them from a huge display in a grocery store. When I buy from a farmer I can see how much love he puts into his crops by the way he talks about them.
