I hope all of you had a joyous and happy holiday this past week. I was fortunate enough this year to make it home to Indiana to celebrate with my family. It had been three years since I’d been able to do that due to my previous jobs out here. When you work in a resort town, getting time off for the holidays is unheard of. My boyfriend came along for the trip and we had a great time catching up with everyone and relaxing. Lots of time was spent in the kitchen helping my mom cook and bake. My dad bought my mom a Nespresso machine for Christmas so we also had a million cappuccinos. Anyone receive a spectacular gift this year? I must have been good. One of [...]

Another day, another Christmas cookie favorite. I bake all of the holiday cookies that I do because I love them, but I honestly think this recipe is one of my ultimate top picks. The twists take a little extra time to roll and shape, but they are the perfect cookie. Lightly sweet, a little bit soft (in fact, when stored in an airtight container they actually start to soften to delicious perfection), and magnificent with a glass of cold milk, a cup of hot tea, or some strong coffee. I wasn’t sure how they would come out at high altitude but they were a success, and I am happy. As I have said before, there’s a certain nostalgia that comes from food memories. These bring back many fond ones. I [...]

The holiday baking continues! Here is another Christmas cookie recipe from my family. My mom found this in our newspaper years ago and it’s just one of those recipes that always tastes like the holidays to me. I also have a soft spot for these cookies because they are a little more unique than the usual thumbprint-style cookie. Chewy Walnut Treasures feature a brown sugar-based dough filled with a walnut mixture that is both sweet and a bit tangy. The filling cooks with the cookie so it comes out chewy- like a soft caramel. The cookies can also be stacked on top of each other after they are baked since the filling sets during the baking process. I hope you enjoy them as much as we do. A few days [...]

Bear with me a bit longer…The High Altitude Bakes Holiday Cookbook is coming soon, I promise. We are just ironing out the wrinkles. Soon you will be on your way to even more holiday baking at altitude! In the meantime, I’ve been busy in my kitchen baking up some homemade gifts- jars of cranberry pomegranate jelly and lots of cookies. Christmas this year is quite exciting because I will get to celebrate with my family for the first time in three years. Working in a resort town will do that! Yesterday evening it started to snow and it’s given our bare ground a nice fluffy blanket. It was a perfect evening in- I could see big snowflakes hitting the kitchen window while I baked. And the glow of the Christmas [...]
